Ingredients
  

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup mushrooms, sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 package veggie sausages, sliced (your choice of flavor)
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions
 

  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Cook Veggies: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for about 3-4 minutes until softened. Stir in the garlic and cook for an additional 1 minute.
  • Sauté Vegetables: Add the bell pepper, carrots, celery, mushrooms, and green beans to the skillet. Cook for 5-7 minutes until the vegetables begin to soften.
  • Add Sausage: Stir in the sliced veggie sausages and cook for another 3-4 minutes until they start to brown slightly.
  • Add Tomatoes and Seasoning: Pour in the diced tomatoes, vegetable broth, and tomato paste. Stir in the dried thyme, oregano, paprika, salt, and pepper. Bring the mixture to a simmer and cook for 5 minutes.
  • Transfer to Casserole Dish: Transfer the mixture to an oven-safe casserole dish. Stir in the frozen peas.
  • Bake: Cover the casserole dish with aluminum foil (if desired) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the casserole is bubbly and the veggies are tender.
  • Rest and Garnish: Remove the casserole from the oven and let it rest for 10 minutes. Garnish with chopped fresh parsley, if desired.
  • Serve: Serve the casserole hot, either as a main dish or a hearty side.
