Ingredients
  

  • 3 ripe bananas
  • ½ cup coconut oil or vegetable oil
  • ½ cup brown sugar (packed)
  • ¼ cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup chopped walnuts or pecans (optional)

Instructions
 

  • Preheat the Oven:Preheat your oven to 350°F (175°C). If using, line your loaf pan with parchment paper or lightly grease it.
  • Prepare the Bananas:In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
  • Mix Wet Ingredients:To the mashed bananas, add the melted coconut oil, brown sugar, maple syrup (or agave nectar), and vanilla extract. Mix well until combined.
  • Combine Dry Ingredients:In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon (if using).
  • Mix Wet and Dry Ingredients:Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  • Add Nuts (Optional):If using nuts, fold them into the batter.
  • Pour Batter into Pan:Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake:Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool:Let the banana bread cool in the pan for about 10 minutes, then transfer to a cooling rack to cool completely before slicing.
  • Serve:Slice and enjoy your delicious vegan banana bread!
