Ingredients
  

For the Apple Topping:

  • 2 medium apples (preferably Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 2 tablespoons unsalted butter
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • A pinch of salt

For the Pancake Batter:

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup buttermilk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions
 

1. Prepare the Apple Topping:

  • In a large skillet, melt the butter over medium heat.
  • Add the brown sugar, cinnamon, nutmeg, and salt. Stir until the sugar dissolves and forms a syrup.
  • Add the sliced apples to the skillet, stirring to coat them evenly with the syrup. Cook for about 5-7 minutes until the apples are tender and slightly caramelized.
  • Stir in the vanilla extract, then remove the skillet from the heat. Set the apple topping aside.

2. Make the Pancake Batter:

  • In a medium mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine the buttermilk, melted butter, and vanilla extract. Whisk until smooth.
  • Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix; a few lumps are okay.
  • Let the batter rest for about 5 minutes.

3. Cook the Pancakes:

  • Heat a non-stick skillet over medium heat. Lightly grease with a small amount of butter or oil.
  • Pour about ¼ cup of the batter into the skillet, spreading it slightly into a circle.
  • Quickly place a spoonful of the cooked apple mixture on top of the batter in the skillet.
  • Cook the pancake for about 2-3 minutes, or until bubbles form on the surface and the edges begin to set.
  • Carefully flip the pancake using a spatula and cook for another 2 minutes until golden brown and cooked through.
  • Transfer the pancake to a plate, apple side up. Repeat with the remaining batter and apple topping.

4. Serve:

  • Stack the pancakes on a plate, apple side up, and serve warm.
  • Optionally, drizzle with maple syrup or add a dollop of whipped cream for extra indulgence.
