Ingredients
  

For the Cilantro Bean Burgers:

  • 1 can black beans, drained and rinsed
  • 1 small red onion, finely diced
  • ½ cup breadcrumbs or rolled oats (for gluten-free option)
  • ¼ cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for cooking)

For the Creamy Avocado-Lime Slaw:

  • 1 ripe avocado
  • ¼ cup plain Greek yogurt (or vegan yogurt for dairy-free option)
  • Juice of 1 lime
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 2 cups shredded cabbage (green or purple)
  • ¼ cup grated carrots
  • 1 tbsp fresh cilantro, chopped

For Assembly:

  • 4 burger buns
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced red onion

Instructions
 

1. Prepare the Bean Burgers:

  • In a large mixing bowl, mash the black beans using a fork or potato masher until mostly smooth, leaving some chunks for texture.
    Add finely diced red onion, breadcrumbs (or oats), chopped cilantro, cumin, smoked paprika, garlic powder, salt, and black pepper to the bowl.
    Stir in the egg (or flax egg) and mix everything together until the mixture is well combined.
    Form the mixture into 4 equal-sized patties. Place them on a plate and refrigerate for 10 minutes to firm up.

2. Cook the Bean Burgers:

  • Pan-Frying: Heat 1 tbsp olive oil in a non-stick skillet over medium heat. Cook the bean patties for 4-5 minutes on each side, or until golden brown and crispy.
    Baking: Preheat the oven to 375°F (190°C). Place the patties on a greased baking tray and bake for 15-20 minutes, flipping halfway through, until firm and crispy.

3. Make the Creamy Avocado-Lime Slaw:

  • In a small bowl, mash the ripe avocado until smooth.
    Stir in the Greek yogurt, lime juice, garlic powder, salt, and pepper.
    Toss the shredded cabbage, grated carrots, and cilantro in the avocado dressing until well coated.

4. Assemble the Burgers:

  • Toast the burger buns if desired.
    Place a lettuce leaf on the bottom half of each bun, followed by the cilantro bean burger.
    Top with a generous scoop of the creamy avocado-lime slaw.
    Add sliced tomatoes and red onion if desired.
    Cover with the top half of the bun and serve immediately.
