Equipment

  • 1 Parchment paper or ghee for greasing

Ingredients
  

  • 2 cups bottle gourd (lauki), grated
  • 1 cup full-fat milk
  • ½ cup condensed milk
  • 1 tablespoon ghee (clarified butter)
  • 1 cup sugar (adjust according to sweetness preference)
  • ½ teaspoon cardamom powder
  • ¼ cup desiccated coconut (optional)
  • 2 tablespoons chopped nuts (almonds, cashews, pistachios) for garnishing
  • A pinch of saffron strands (optional)

Instructions
 

  • Step 1: Prep the Bottle Gourd
    Peel the bottle gourd and grate it finely.
    Squeeze out the excess water from the grated bottle gourd and set it aside.
  • Step 2: Cook the Bottle Gourd
    In a heavy-bottomed pan, heat 1 tablespoon of ghee on medium heat.
    Add the grated bottle gourd and sauté for about 5-7 minutes, stirring frequently until the raw smell disappears.
  • Step 3: Add Milk & Cook
    Pour 1 cup of full-fat milk into the sautéed bottle gourd.
    Cook on medium heat, stirring occasionally, until the milk is absorbed and the gourd becomes soft (about 10-12 minutes).
  • Step 4: Sweeten the Mixture
    Add the condensed milk and sugar to the cooked gourd.
    Stir continuously until the mixture thickens and begins to leave the sides of the pan (around 10 minutes).Add the cardamom powder and saffron (if using), and mix well.
  • Step 5: Add Coconut (Optional)
    For added texture, stir in the desiccated coconut and cook for another 2-3 minutes until fully combined.
  • Step 6: Set the Burfi
    Grease a plate or tray with ghee or line it with parchment paper.
    Pour the mixture into the tray and spread it evenly using a spatula.
    Garnish with chopped nuts, gently pressing them into the mixture.
  • Step 7: Rest the Burfi
    Let the burfi set at room temperature for about 1 hour or until firm.
    Once set, cut it into square or diamond-shaped pieces.
  • Step 8: Serve & Store
    Serve your delicious Bottle Gourd Burfi as a delightful Indian sweet!
    Store it in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
