Instructions
Prepare the BatterIn a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.In a separate bowl, beat the egg and then mix in the milk, melted butter, and vanilla extract (if using).Pour the wet ingredients into the dry ingredients and whisk until just combined. Some lumps are okay; do not overmix.
Rest the BatterLet the batter rest for about 5 minutes to allow the baking powder to activate.
Heat the Griddle/SkilletPreheat a griddle or large skillet over medium heat. Lightly grease with non-stick spray or a small amount of butter.
Cook the PancakesUsing a ladle or measuring cup, pour about 1/4 cup of batter onto the griddle for each pancake.Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.Flip the pancake with a spatula and cook for another 2-3 minutes, or until the pancake is golden brown and cooked through.Remove pancakes from the griddle and place on a plate or cooling rack.
ServeServe warm with your favorite toppings such as butter, maple syrup, fresh fruits, or whipped cream.

Tips
For extra fluffy pancakes, you can separate the egg white and yolk, beating the egg white until stiff peaks form, and then fold it into the batter just before cooking.
Make sure the griddle/skillet is not too hot to prevent burning the pancakes before they cook through.
To keep pancakes warm while cooking the rest of the batch, place them on a baking sheet in a 200°F (95°C) oven.
